This recipe is a great way to get your daily egg, or indeed to use up excess eggs if you’ve over purchased. Eggs provide the perfect balance of amino-acids, which are the building blocks of protein. Incorporating Popeye’s favourite food, spinach, which is one of the most nutrient dense foods readily available, makes this a very healthy gluten-free meal. To add some healthy carbohydrate, serve along side your favourite wholegrain bread, rice or potatoes.

Ingredients
- 100g ham or cooked turkey breast cut into small pieces
- 150g or about 2 cups baby spinach
- 1 large onion, diced
- 5 eggs
- 1 cup grated cheese (e.g. Gouda)
- ⅔ cup milk
- salt and pepper to taste
- 1 tablespoon olive oil
Instructions
- Heat up the oven to 160 Celcius
- Slice and dice the ham or turkey, chop the onion
- Heat oil in a skillet over medium heat, and fry the onions
- Add spinach and cook briefly; add in ham or turkey and set aside
- Grate cheese
- Whisk the eggs, then add milk, cheese, pinch of salt and pepper – mixing them well
- Spread the spinach mixture on the bottom of a baking dish
- Pour the egg mixture over the spinach
- Bake for about 30 mins at 160 Celcius (until lightly brown)
- Serve warm with a salad

Easy tasks for younger children
- measure ⅔ cup milk
- whisk the eggs then add milk and grated cheese
- sprinkle salt and pepper into the above mix
Moderate tasks for older children
- dice onion
- grate cheese
- break the eggs
