Ingredients
- large portebello mushrooms
- red pepper (diced)
- onion (diced)
- parsley (chopped)
- bacon (optional)
- mozzarella
- black Pepper
Instructions
- Lightly grill portobellos with bottoms facing up for 1-2 min
- Turn them over
- Fill the portebellos with the onions, red pepper & parsley. (bacon if available)
- Line the top with mozzarella
- Sprinkle black pepper
- Put into toaster oven and turn the timer on for 3 minutes, until mozzarella has melted.
- Remove and serve warm

- tear parsley
- sprinkle black pepper on top of the ready portobellos

- dice red pepper and onion
